2010 Karl Stockhausen Signature Semillon


DISTRICT:
Hunter Valley

VARIETIES:
100% Semillon

MATURATION:
After crushing and destemming the must was chilled to 12ºC. The free run juice was kept separate from the pressings juice, then cold settled. Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12-15 ºC for 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling in late June 2010.

VINEYARD/SOIL:
Our Semillon is grown on well-drained sandy loam soils located in the heart of Hunter Valley wine country N.S.W. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 11.5%       Acidity - 6.9g/L      

pH - 3.3                    Residual Sugar - 1.13g/L

Notes:
The palate displays an elegant mineral line with refreshing lemonade and lemon sherbet flavours present. The acid structure is delicate and tight as a young wine, which will soften with age. The finish is persistent with lingering lime zest characters adding great length to the wine.

2009 Karl Stockhausen Signature Shiraz


DISTRICT:
Hunter Valley

VARIETIES:
100% Shiraz

MATURATION:

After crushing and destemming the must was fermented on the grape skin for approximately 10 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was  racked into brand new and 1 year old small French (80%) and American (20%) oak casks for 12 months maturation. The wine was fined and filtered for bottling in July 2010.

 

 

VINEYARD/SOIL:

Our Shiraz is grown on well-drained fertile red clays over limestone located in the heart  of Hunter Valley wine country N.S.W. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

 

BOTTLING SPECIFICATION:

Alcohol - 13.0%    

Residual Sugar - 2.5g/Lt

Acidity - 6.75g/Lt    

pH - 3.35   

Notes:
The palate is full yet soft with excellent fruit flavour and silky tannins. There is added complexity of plum fruit flavours combined with earth and spicy pepper characters giving the wine great length. Full bodied style. This wine is suited to red meat dishes, pastas and mature cheeses.

2006 Karl Stockhausen Signature Chardonnay


DISTRICT:
Hunter Valley

VARIETIES:
100% Chardonnay

MATURATION:
After crushing and destemming the must was chilled to 12ºC, then pressed and cold settled. Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12 - 15 ºC for 20 days. The fermentation was carried out in new and 1 year old small French oak casks. The wine received extended maturation on yeast lees with occasional lees stirring. After 4 months in the oak casks the wine was racked to a stainless steel vessel, stabilised, fined and filtered for bottling.

Our Chardonnay is grown on well-drained sandy loam soils. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 13.0%

Residual Sugar - 1.66g/Lt

pH - 3.30

Acidity - 6.5g/Lt

Notes:
This wine is elegant in structure displaying refreshing melon and citrus characters with a touch of vanillin oak complexity. The pallet is soft and flavoursome with good length. Drinking well now or will develop very rewarding toasty, nutty characters with careful medium term cellaring, 2-5 years.
