2009 Early Harvest Semillon Sauvignon Blanc


DISTRICT:
Hunter Valley & Orange Region

VARIETIES:

70% Semillon

30% Sauvignon Blanc

MATURATION:

After crushing and destemming the must was chilled to 12 degrees, then pressed and cold settled.  Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12-15 degrees for 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling in early July 2009.

VINEYARD/SOIL:

Our Semillon is grown on well-drained sandy loam soils located in the heart of Hunter Valley wine country N.S.W. The Sauvignon Blanc is grown at our cool climate vineyard in Orange N.S.W. Both vineyards have drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 12.0%     Residual Sugar - 5.5g/L

Acidity - 7.4g/L      pH - 3.00      

Notes:

Previously known as our Early Harvest Semillon, we have now blended our Hunter Valley Semillon with Sauvignon Blanc from our cool climate vineyard in Orange which has created a wine displaying great flavour and length. The bouquet shows lifted lemon and lime characters with an attractive grassy complexity. The palate offers refreshing citrus and tropical fruit flavours with lively acidity and a pleasant persistent finish.

2010 Gewurztraminer

100% Gewurztraminer

MATURATION:
After crushing and destemming the must was chilled to 12°C, then pressed and cold settled. Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12-15°C for 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling in late May 2010.

Our Gewurztraminer is grown on well-drained sandy loam soils is located in the heart of Hunter Valley Wine Country in NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 12.5%       Residual Sugar - 4.5g/L       pH - 3.38

Acidity - 6.2g/L       Volume - 1,800 L

Notes:

This fruit driven aromatic wine displays fresh varietal characters of rose petal and Turkish delight. The wine has a luscious, limey palate which is well balanced by generous acidity. Drinking well now or cellar short term (1-3 years).

2009 Homestead Verdelho

Our Verdelho is grown on well-drained sandy loam soils, located in the heart of Hunter Valley wine country NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavor.

BOTTLING SPECIFICATION:

Alcohol - 13.8%     Residual Sugar - 5.5g/L     Acidity - 7.10g/L

pH - 3.20                 Volume - 8,500L

 

Notes:

This Verdelho displays lifted fresh tropical fruit and passionfruit aromas. Typical of Verdelho from this region the wine is rich and full flavoured with a touch of sweetness creating a long and complex palate.  Enjoy this early drinking style.

2008 Rock Pile Chardonnay

VARIETIES:

100% Chardonnay

MATURATION:

After crushing and destemming the must was chilled to 12 degrees. Then pressed and cold settled. Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12 - 15 degrees for 15 days. 50% of the fermentation was carried out in small French oak casks and further matured in the casks for 4 months. The remaining 50% was fermented in a stainless steel vessel to retain fruit freshness then back blended prior to bottling. Once blending was complete the wine was stabilised, fined and filtered for bottling.

VINEYARD/SOIL:

Our Rock Pile vineyard soils have well drained gravely loams that continually produce Chardonnay of excellent quality. The vineyard has drip irrigation installed in each vine row to ensure vine health and consistency of quality. Crop yields are relatively low, producing excellent concentration of fruit flavour.

Alcohol - 13.5%           Residual Sugar - 3.0g/Lt

Acidity - 6.75g/Lt         pH - 3.35       Volume - 5000Lt

 

Notes:

The Rock Pile block was our original Chardonnay planting in 1972. A fresh tropical, fruit driven style that is rich and flavoursome on the palate. The wine is complimented by subtle vanillin French oak characters adding complexity and creaminess to the length and finish. Suited to many occasions and many cuisines or simply enjoy a glass on its own. A good all rounder! Drinking well now.

2009 Cold Soaked Cabernet Sauvignon

VARIETIES:

100% Cabernet Sauvignon

MATURATION:

After crushing and destemming the must was cold soaked for 72 hours before being fermented on the skin for approximately 8 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was racked into 1 and 2 year old small French oak casks for 12 months maturation. The wine was then stabilised, fined and filtered for bottling.

VINEYARD/SOIL:

Our Cabernet Sauvignon is sourced from our own vineyards in the Hunter Valley, Orange and Wrattonbully regions of NSW and South Australia. The soil types vary from red clays over limestone to deep, rich volcanic soils. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. Crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 15.0%      Residual Sugar - 2.8g/Lt

Acidity - 7.8g/Lt      pH - 3.46       Volume - 6000Lt

 

Notes:

The cold soaking of Cabernet Sauvignon is a technique used to enrich the colour, extract softer tannins and create complex flavours. The freshly crushed fruit is temperature modified and left on skins for some time before the fermentation commences. The palate is powerful displaying layers of dark berries combined with soft balanced tannins and nice subtle oak characters. The finish has great length and weight. A very versatile wine suited to many red meat cuisines including BBQ foods, pizzas and pastas as well as roasted duck.

2009 Old Vines Shiraz

100% Shiraz

MATURATION:
After crushing and destemming the must was cold soaked for 24 hours before being fermented on the grape skin for approximately 6 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was racked into 2 and 3 year old small French 70% and American 30% oak casks for 14 months maturation. The wine was then blended, fined and filtered for bottling.

VINEYARD/SOIL:

Our Shiraz is grown on well-drained fertile red clays over limestone based soils. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 14.5%         Residual Sugar - 2.7g/Lt

Acidity - 7.60g/Lt       pH - 3.49          Volume - 9,000 L

 

Notes:

This fruit driven wine is rich and flavoursome and a classic in our range. Typical of the variety the wine displays pepper, spice and layers of ripe berry characters. The tannin structure is refined and smooth leaving a persistent finish. Full bodied style.

2008 Sparkling Pinot Chardonnay


DISTRICT:
Hunter Valley / Orange

VARIETIES:

80% Pinot Noir
20% Chardonnay

MATURATION:

Both varieties were whole bunched pressed and the juice was fined and cold settled. Once settled the clear juice was filtered to a stainless steel vessel and inoculated with selected sparkling wine yeast and fermented at 14-16 degrees for 14 days. At the end of the alcoholic fermentation the two varieties , which had been kept separate thus far, were racked off yeast deposits, blended, fined, stabilised and filtered for Tirage in May 2008. The wine went through secondary fermentation in the bottle and spent a further 18 months maturation on yeast lees in the same bottle. Disgorging took place in October 2009 and the wine was released for sale in November 2009.

Our Chardonnay is grown on well-drained sandy loam soils located in the heart of Hunter Valley wine country NSW. Our Pinot Noir is grown on deep, rich volcanic soils with an altitude of 800m above sea level and located on the slopes of Mount Canobolas, Orange Region NSW. Both vineyards have drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 12.0%          Residual Sugar - 6.50g/Lt

Acidity - 7.70g/Lt       pH - 3.30       Volume - 4500Lt

 

Notes:

Lifted citrus aromas with fresh strawberry complexity and a subtle biscuit character produced through extended lees contact. The palate displays a fresh and lively mouth feel with crisp acidity and a touch of sweetness on the finish. A creamy mousse is achieved through the traditional methode champenoise technique.
