Our Cellar Reserve range represents small parcels of distinctive wines that our winemaker selects each vintage for bottling for our club members for the first six months of their release

2007 Cellar Reserve Semillon


DISTRICT:
Hunter Valley

VARIETIES:
 100% Semillon

VINEYARD/SOIL:
Our Semillon is grown on well-drained fertile red clays over limestone located in the heart of Hunter Valley Wine Country NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 12.5%      Residual Sugar - 3.6g/Lt

Acidity - 6.60g/Lt      pH - 3.20

 

 

Notes:

The 2007 Semillon displays an excellent lift of lemon fruit aromas typical of the variety. The palate shows an elegant mineral line with refreshing acidity adding great length to the wine.

2008 Cellar Reserve Chardonnay


DISTRICT:
Orange Region

VARIETIES:

100% Chardonnay

VINEYARD/SOIL:

This Cellar Reserve Chardonnay was grown on our high altitude vineyard at Orange. The extended ripening period develops greater intensity of flavour whilst retaining natural acidity, and produces are more elegant style of Chardonnay compared to warmer climates.

BOTTLING SPECIFICATION:

Alcohol - 13.0%

Notes:

This 2008 Chardonnay was barrel fermented and matured in 1-year old French oak hogheads, and received medium term lees contact. It displays grapefruit and sweet nut aromas, and has a long, well balanced and flavoursome sweet pear and citrus palate with great complexity.Recommended cellaring: 3 - 5 years.

2008 Cellar Reserve Merlot


DISTRICT:
Orange

VARIETIES:
100% Merlot

MATURATION:
After crushing and destemming the must was cold soaked for 12 hours before being fermented on the skin for approximately 7 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was racked into 2 year old small French oak casks for 12 months maturation. The wine was fined and filtered for bottling in September 2009.

Our Merlot is grown on deep, rich volcanic soils with an altitude of 800m above sea level and located on the slopes of Mount Canobolas, Orange Region NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality.

Crop yields are relatively low, producing excellent concentration of fruit flavour.

 

BOTTLING SPECIFICATION:

Alcohol - 14.5%        pH:  3.40        Acidity:  6.5 gl  

Notes:

This medium to full bodied wine displays spicy plum fruit characters with a touch of cinnamon and well integrated oak. The tannins are fine and soft leading to a Lingering chocolate finish.

Cellaring: 3-5 years.

2007 Cellar Reserve Shiraz

100% Shiraz

VINEYARD/SOIL:

This Shiraz is grown on deep, rich volcanic soils with an altitude of 800m above sea level and located on the slopes of Mount Canobolas, Orange Region NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. Crop yields are relatively low, producing excellent concentration of fruit flavour.

The Orange region in NSW is the highest altitude wine region in Australia, and therefore a distinctively cool climate region. The wines produced from this area a typically finer and more elegant in structure than those of warmer climates.

BOTTLING SPECIFICATION:

14.5% Alcohol

8.6 Standard Drinks

Notes:

This is a medium to full bodied wine that shows great fruit concentration supported by fine tannins, cedary oak and spices and matches well with red meats and pastas. The bouquet has lifted mixed pepper and spice along with red berry fruit aomas. A great example of cool climate Shiraz. You can enjoy this wine now and over the next 3 - 5 years.

2008 Cellar Reserve Verduzzo


DISTRICT:
Orange Region

VARIETIES:
100% Verduzzo

VINEYARD/SOIL:
Our Verduzzo is grown in our high altitude vineyard at Orange, to match the cool conditions of North-East Italy where this variety is common

Notes:

This wine displays complex aromas of ripe pears, nougat and almonds.

On the palate, there are flavours of pears and stonefruits, with fresh acidity. The flavours are complemented by the trademark mineral characters of the variety.

2009 Cellar Reserve Sauvignon Blanc


DISTRICT:
Orange

VARIETIES:
100% Sauvignon Blanc

MATURATION:
After crushing and destemming the must was chilled to 12ºC. Then pressed and cold settled.  Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12-15 ºC for 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling in July 2009.

Our Sauvignon Blanc is grown on deep, rich volcanic soils with an altitude of 800m above sea level and located on the slopes of Mount Canobolas, Orange Region NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. Crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:
Alcohol:  13.5%

Notes:

A very attractive wine displaying aromas of passion fruit and gooseberries with a touch of grassy complexity. The palate is rich and flavoursome with a clean refreshing citrus line giving great length to the finish.

Drink now, but can be cellared for 1-3 years
