2009 Dairy Hill Single Vineyard Semillon


DISTRICT:
Hunter Valley

VARIETIES:

100%  Semillon

MATURATION:
After crushing and destemming the must was chilled to 12ºC. The free run juice was kept separate from the pressings juice, then cold settled. Once settled the clear juice was racked and inoculated with a selected white wine yeast and fermented at 12-15 ºC for 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling in early June 2009.

VINEYARD/SOIL:
Our Semillon is grown on well-drained sandy loam soils located in the heart of Hunter Valley wine country N.S.W. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour. The Dairy Hill block consistently produces the best Semillon every year.

BOTTLING SPECIFICATION:

Alcohol - 11.2%     Residual Sugar - 1.0g/L     pH - 3.05

Acidity - 6.90g/L    Volume - 2,250L

Notes:
With a scented lemon blossom bouquet, this wine is tangy and lively whilst young, showing crisp citrus flavours with refreshing acidity. The finish is persistent with lingering lime and green apple characters, adding great length to the wine. The acid structure is delicate and tight as a young wine, which will soften with age.

2007 Dairy Hill Single Vineyard Shiraz *** DUE FOR RE-RELEASE IN LATE 2010 ***


DISTRICT:
Hunter Valley

VARIETIES:
100%  Shiraz

MATURATION:
After crushing and destemming the must was cold soaked for 36 hours before being  fermented on the grape skins for approximately 8 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was  racked into new and 1 year old small French oak casks for 14 months maturation. The wine was fined and filtered for bottling in July 2008.

VINEYARD/SOIL:
Our Shiraz is grown on well-drained fertile red clays over limestone located in the Mount View region of the Lower Hunter Valley, N.S.W. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

Notes:

An intense bouquet of plum and spice with supporting French oak.

The fruit rich palate displays intense fruit concentration with ripe tannins and high quality oaking treatments. There is added complexity of plum fruit flavours combined with earth and spicy pepper characters giving the wine great length. Full bodied style.

Can be approached early or careful cellaring for up to 10 years will be rewarded.

VARIETIES:
100% Chardonnay

MATURATION:
After crushing and destemming the must was chilled to 12 degrees, then pressed and cold settled. Once settled 30% of the clear juice was racked into new French oak barrels where wild fermentation and partial malo-lactic fermentation took place. The remainder of the Chardonnay was fermented by a selected white wine yeast in a stainless steel vessel at 12-15 degrees for 20 days. The oak component received extended maturation on yeast lees with occasional lees stirring. After 8 months in the oak barrel the two components were blended together, stabilised, fined and filtered for bottling in October 2009.

Our Chardonnay is grown on well-drained sandy loam soils located in the heart of Hunter Valley wine country N.S.W. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour.

 

BOTTLING SPECIFICATION:

Alcohol -  13.5%        Residual Sugar - 1.8 g/L          pH - 3.35     

Acidity - 6.5 g/L         Volume - 2,250 L

 

 

Notes:
Subtle melon and tropical fruit aromas with a hint of butterscotch. This wine is rich and flavoursome displaying refreshing melon and citrus characters supported by vanillin oak. The pallet is soft and creamy with a complex lingering finish.

2008 Currawong Single Vineyard Cabernet Sauvignon

100% Cabernet Sauvignon

MATURATION:
After crushing and destemming the must was cold soaked for 24 hours before being fermented on the skin for approximately 8 days in a static fermenter. The wine was then pressed off to another stainless steel vessel. Malolactic fermentation was completed shortly after the alcoholic fermentation and the wine was racked into new and 1 year old small French oak casks for 14 months maturation. The wine was fined and filtered for bottling in October 2009.

VINEYARD/SOIL:
Our Cabernet Sauvignon is grown on deep, rich volcanic soils with an altitude of 800m above sea level and located on the slopes of Mount Canobolas, Orange Region NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. Crop yields are relatively low, producing excellent concentration of fruit flavour.

BOTTLING SPECIFICATION:

Alcohol - 15.0%      Residual Sugar - 1.8 g/L        pH - 3.46      

Acidity - 7.1g/L      Volume - 2800L

Notes:

Deep red in colour, displaying complex aromas of lifted blackberry and cinnamon characters with balanced cedary oak. Layers of rich black fruits with a touch of mint have produced a full bodied wine of style and sophistication. The inviting ripe tannins and well integrated French oak give the palate structure, weight and length.
