DISTRICT: Hunter Valley VARIETIES:
100% Semillon
MATURATION: After crushing and destemming the must was chilled to 12ºC. The
free run juice was kept separate from the pressings juice, then
cold settled. Once settled the clear juice was racked and
inoculated with a selected white wine yeast and fermented at 12-15
ºC for 15 days. At the completion of the alcoholic
fermentation the wine was racked off yeast deposits, stabilised,
fined and filtered for bottling in early June 2009.
VINEYARD/SOIL: Our Semillon is grown on well-drained sandy loam soils located in
the heart of Hunter Valley wine country N.S.W. The vineyard has
drip irrigation installed on each vine row to ensure vine health
and consistency of quality. The crop yields are relatively low,
producing excellent concentration of fruit flavour. The Dairy Hill
block consistently produces the best Semillon every year.

Acidity - 6.90g/L Volume - 2,250L
Notes: With a scented lemon blossom bouquet, this wine is tangy and
lively whilst young, showing crisp citrus flavours with refreshing
acidity. The finish is persistent with lingering lime and green
apple characters, adding great length to the wine. The acid
structure is delicate and tight as a young wine, which will soften
with age.
