2015 Dairy Hill Single Vineyard Semillon

Hunter Valley



2015 proved to be a very challenging season in the Hunter Valley. Characterised by very dry conditions at the start of the growing season, the berry sizes were smaller than normal. Into ripening, the Hunter Valley experienced higher then average rainfall recording over 100mm at the start of the white harvest. This rain continued making harvest decisions very tricky. However, with judicious selective picking, the resulting wines are fruit driven, precise and complex.


Our Semillon is grown on well-drained sandy loam soils located in the Mount View region of the Hunter Valley. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour. The Dairy Hill block consistently produces the best Semillon every year.


After crushing and de-stemming the must was chilled to 12°C.  The free run juice was kept separate from the pressings juice, then cold settled.  Once settled the clear juice was racked and inoculated with selected white wine yeast and fermented at 12-15°C for around 15 days.  At the completion of the alcoholic fermentation the wine was racked off yeast deposits, stabilised, fined and filtered for bottling..


Showing the typical Mount View characters of kaffir lime and lemongrass, the subtle nose is enticing. The palate is long and precise with salivating acidity, lemongrass and hints of quinine. A true expression of our individual block, this wine is expressive whilst young but built to last.


Whilst superb young, this wine will develop complexity after careful cellaring up to 10 years.

HERE’S a white that sings on the tastebuds now and promises to mature into a Hunter classic. It shines green-tinted straw, has tropical fruit-salad aromas and brings vibrant ruby grapefruit flavour to the front palate. The middle palate introduces sherbet, apple peel and flint characters, and slatey acid refreshes at the finish.
