    This bottle fermented sparkling wine utilises Chardonnay from our Hunter Valley vineyard. It is a wine of great complexity and texture that leads into a crisp, dry finish.     Hand harvested to reduce phenolic exposure and colour pickup. Fermented separately before being assembled post primary fermentation. No malolactic fermentation due to the lower acidity of Hunter Chardonnay and sent to tirage immediately.     2021 began with an unusually cool weather pattern as ar esult of a ‘La Niña’ influence. Luckily a break of classic warm days and cool nights in early January led to exceptional flavour development with natural acidity retention resulting in a strong suite of whites.
