2024 Single Vineyard 'Dairy Hill' Shiraz
Sourced from our Dairy and Hill vineyard and a classic example of Hunter Shiraz that shows bright red fruits, violets, roasted plums, and savoury spice.
Lifted floral spice of violet and rosemary opens the bouquet, leading to a concentrated palate of mulberry, black cherry, and tangy Davidson plum. Bright acidity and superfine tannins give structure and poise, with subtle pepper and cedar notes lingering on the long, elegant finish.
Lamb ragù or eggplant parmigiana.
The fruit was hand harvested, immediately destemmed and crushed into small open fermenters where it remained cold soaking until the indigenous yeast had built enough of a population to engage the primary fermentation. Post ferment the wine was gently pressed off skins to new and seasoned
French oak where it underwent an indigenous malolactic fermentation.
The 2024 vintage in the Hunter Valley was marked by a mild, dry growing season that allowed for excellent fruit ripening and retention of natural acidity. Consistent warm days and cool evenings produced grapes with concentrated flavours, fine tannin structure, and remarkable aromatic lift.
