2024 'Cold Soaked' Cabernet Sauvignon
The term 'cold soak' is a winemaking technique employed before fermentation to enhance the extraction of colour, flavour and aromatics.
This wine is a classic example of Cabernet Sauvignon, deep in colour with lifted aromas of blackberry, cassis and dried herb notes. The palate is layered with dark berry fruit and balanced with fine grained tannins and a subtle oak influence.

‘Cold Soaked’ refers to the winemaking process that occurs right before the alcoholic fermentation begins. As the grapes are harvested, once at the winery, they are destemmed, crushed and chilled to slow the onset of fermentation. This allows the juice to have more contact time with the skin to extract as much colour, tannin and flavour as possible.
2024 encountered early frosts which reduced yields. What followed was steady ripening and cool evenings to produce fruit of excellent quality. The vintage is noted for its balance, structure, and classic regional character.
