This elegant Blanc de Blancs is made in a style retaining delicate fruit flavours and fine structure. The wine is showing aromas of citrus and stone fruits combined with creamy yeast complexity.

The wine opens with bright aromas of citrus zest and ripe stone fruits, beautifully intertwined with creamy yeast complexity. On the palate, it is fresh and lively, with vibrant acidity, fine mousse, and a long, crisp finish that carries the fruit and creamy notes beautifully. Elegant and balanced, it is approachable now but also has the structure to develop further with careful cellaring.

Picked in the cool of the morning, the Chardonnay juice was then pressed off lightly before being cold settled and inoculated with a select sparkling yeast. Once fermentation was complete, the wine was stirred on lees for a few months to enhance texture and richness on the mid palate. After a period of ageing, the sparkling wine was prepared for bottling.

Vintage information

Our Chardonnay is grown on well-drained sandy loam soils located in the heart of the Hunter Valley. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yield is relatively low, producing excellent concentration of fruit flavour.
