Tasting Notes

Deep in colour, concentrated dark fruits of blackberry and cassis evolve to savoury with dried herbs nuanced with hints of classic cigar box. The palate is vibrant with cherry and chocolate layering harmoniously with French oak.

Winemaking

‘Cold Soaked’ refers to the winemaking process that occurs right before the alcoholic fermentation begins. As the grapes are harvested, once at the winery, they are destemmed, crushed and chilled to slow the onset of fermentation. This allows the juice to have more contact time with the skin to extract aas much colour, tannin and flavour as possible.

Vineyard

The 'Cold Soaked' Cabernet is made from a combination of our cool climate, estate vineyards in Orange and on the Limestone Coast, Wrattonbully in South Australia.

Vintage

2024 encountered early frosts which reduced yields. What followed was steady ripening and cool evenings to produce fruit of excellent quality. The vintage is noted for its balance, structure, and classic regional character.
